Orange Butter Cake with Mixed Fruits

The original recipe was without the mixed fruits, but I had some leftovers. Gotta use it!



150g butter
100g castor sugar
grated rind of 1 orange
3 eggs, separated
1 1/2 tbsp freshly squeezed orange juice
125g self-raising flour, sifted
1/8 tsp baking powder, sifted
1 tsp milk powder
250g mixed fruits, mixed with 3 tbsp plain flour

1. Grease sides and line the base of a 20cm round cake tin with greaseproof paper. Preheat oven at 170 degree C.
2. Beat egg whites with some of the sugar until it form firm peaks.
3. In a mixing bowl, beat yolks with sugar and orange rind until double the size. Add in orange juice and beat again for a minute.
4. Cream butter and whisk in the yolk mixture.
5. Fold in flour and baking powder alternately with meringue.
6. Fold in fruits lightly, remember not to over mix them.
7. Bake for 50–60 minutes or until cooked. Leave the cake to cool for 5–10 minutes before turning out onto a wire rack to cool completely.
