Bawean Bread (Roti Baweyan)

No, I'm not a Baweyanese. I'm a proud Banjarese. >_<
Dough:
650g plain flour
320ml warm water
60ml vegetable oil
2 dessertspoon ghee
1/2 tsp baking powder
1 tsp castor sugar
1/2 tsp salt
Filling: (Stir fry)
1 kg potatoes, cooked and mashed
3 eggs, beaten lightly
chinese celery, red/green chillies
4 tbsp onions
200g chicken meat, diced
1 tsp white pepper
1 tsp salt
1. For the dough, mix all of the ingredients. Knead for 5 minutes and let it rest for 1 hour.
2. Divide the dough, roll it flat, spoon in some of the fillings and pull the dough from the sides to cover the fillings and to create a rectangular shape.
3. Pan fry dough until golden brown.
