Bengali’s Bread
Source
350g bread flour, sifted
1 tbsp shortening
a pinch of salt
170 ml warm water
1 desertspoon yeast
2 desertspoon castor sugar
1. Mix yeast, some sugar and 3 tbsp of water. Leave it aside.
2. Mix all of the ingredients. Knead dough for 10-15 minutes. Let it rest for about 2 hours.
3. Punch the dough to release the air. Divide dough into 2 parts and place them in a greased pan.
4. Let it rise again, for about 2 hours. Bake for 20-30 minutes at 175 degree C.
Bawean Bread (Roti Baweyan)

Dough:
650g plain flour
320ml warm water
60ml vegetable oil
2 dessertspoon ghee
1/2 tsp baking powder
1 tsp castor sugar
1/2 tsp salt
Filling: (Stir fry)
1 kg potatoes, cooked and mashed
3 eggs, beaten lightly
chinese celery, red/green chillies
4 tbsp onions
200g chicken meat, diced
1 tsp white pepper
1 tsp salt
1. For the dough, mix all of the ingredients. Knead for 5 minutes and let it rest for 1 hour.
2. Divide the dough, roll it flat, spoon in some of the fillings and pull the dough from the sides to cover the fillings and to create a rectangular shape.
3. Pan fry dough until golden brown.
Microwave Popcorn

1/2 cup unpopped popcorn
1 tsp vegetable oil
1/2 tsp salt, or to taste
1. In a cup or small bowl, mix together the unpopped popcorn and oil. Pour the coated corn into a brown paper lunch sack, and sprinkle in the salt. Fold the top of the bag over twice to seal in the ingredients.
2. Cook in the microwave at full power for 2 1/2 to 3 minutes, or until you hear pauses of about 2 seconds between pops.
3. Carefully open the bag to avoid steam, and pour into a serving bowl.
Aunt Johnnie's Pound Cake

100g shortening
225g butter
2 cups white sugar
5 eggs
1/4 tsp salt
1 tsp vanilla essence
1 cup milk
1/2 tsp baking powder
3 cups cake flour, sifted
1. Preheat oven to 150 degrees C. Lightly grease and flour a 10 inch Bundt pan.
2. Cream shortening, butter and sugar until light and fluffy (for best results use an electric mixer). This will take a while. Add eggs one at a time, beating well after each addition.
3. Combine baking powder and flour. Stir into creamed mixture alternately with the milk, starting and ending with flour. Pour batter into prepared pan.
4. Bake in the preheated oven for 1 to 1 1/2 hours, or until a toothpick inserted into the centre of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
Fried Oyster Omelette

150g fresh oysters, lightly rinsed and well drained
1 tbsp chopped garlic
3 tbsp oil
1 tbsp sesame oil
3 eggs, lightly beaten
1 tbsp chopped coriander and spring onion
Batter:
40g sweet potato flour
100ml water
1/2 tsp salt
Seasoning:
1 tsp fish sauce
Dash of monosodium glutamate
Dash of pepper
1. Combine batter ingredients. Stir to mix well and set aside.
2. Heat oil and sesame oil in a nonstick saucepan. Pour in the batter and allow to set for 20-30 seconds until a thin crispy skin forms.
3. With a spatula, push the centre of the formed skin slightly open then add garlic, eggs and seasoning.
4. Add the oysters and a little more oil if necessary. Stir-fry well to mix with the sweet potato flour skin. Toss and fry briskly then dish out and serve with a sprinkling of chopped coriander and spring onion.
Silver Fish Fritters

120g silver fish
1 egg, lightly beaten
6 tbsp plain flour
2 tbsp self-raising flour
1/4 cup water
2 tbsp chilli paste
2 tsp minced garlic
salt and pepper to taste
Oil for frying
1. Wash and soak silver fish, drain. Add beaten egg into silver fish and stir.
2. Add the flours, salt and mix well. Pour water bit by bit to get the paste like consistency.
3. Add chilli paste and garlic powder, mix till well blended.
4. Pour spoonfuls into hot oil and fry till golden brown.
5. Server hot with sauce at the side.

Michael Joseph Jackson (1958-2009)
I first saw MJ when I was 8 years old. I think the video clip was 'Black or White'. I swear that I didn't really know about music at that age, but i thought I was grooving to it. Not to mention, MJ was kinda hot. >_<
I wasn't this BIG fan of MJ, but i sincerely think that he is a music genius. He's original and you can never get enough of him. He's almost perfect, but he's obsession with his looks and loves towards children brought his own destruction. I just don't understand. So, okay he changed himself to become white and that's a BIG deal? We have women out there who totally change their looks to become 'something' else, and most of us don't have a problem with that? And don't get me started with man turning into a woman.
He loved children. I believe him. The problem lies with dirty westerners minds. They cannot accept the fact that a man can love children except for a pheadophile. And some of them manupilate this fact and extort money from him. For more than 10 years, he's gone through some much stress that the Jackson's former publicist,Michael Levine was quouted saying, "a human simply cannot withstand this level of prolonged stress."
On the day he passed away, I was shocked. The first thought in my mind was, 'That's Michael Jackson. He can't be dead.' But what like Juelz Santana said, "That just shows you everybody is human, nobody is immune to nothing — especially death."
I just wish that he can make this last comeback. Like just this one super concert or an album, because right now, i really miss him. May God bless your soul Mikael.

Easy popcorn
This Australian microwave popcorn is easy to make and it's delicious, well at least to my mom it is(I don't like salty popcorn, i love caramel corn >_< ). It's selling at NTUC for just SGD0.95, instead of the usual SGD1.95. That's because the product is expiring soon. They weren't being kind-hearted.... FYI...
Sarpinos!
My sister insisted that Sarpino's Pizzeria is owned by a boyanese... Hahaha. Obviously not. We had Mediterranean Chicken and Midnite Express pizzas, spicy chicken calzone and garlic bread( which is made up of pizza dough leftovers and small amount of garlic butter) It wasn't that bad, but it's not that good either. I give 3 out of 5.
Yau Char Kwai (Chinese Crullers)

A:
300g high protein flour, sifted
50g flour, sifted
1/2 tsp double action baking powder, sifted
B:
1/2 tsp sugar
2 Tbsp lukewarm water
2 tsp instant yeast
C:
250ml water
1/2 tsp bicarbonate of soda
1/4 tsp alum (pak fun)
1/4 tsp ammonia powder (chow fun)
1 tsp salt
1. Put (A) in the bowl of an electric mixer. Mix (B) and leave aside to froth for 10 minutes. Combine (C) together.
2. Pour (B) into (A) and mix well, then add in (C) and beat for five minutes until soft dough is formed. Cover and leave aside to rise to double its size.
3. Turn out dough onto a lightly floured surface and knead until smooth. Roll out into a long rectangle, and then cut into strips. Place two strips one on top of the other and allow to rest for five to 10 minutes.
4. Heat a wok with oil till hot. Press lightly on the two strips of dough with a satay stick. Stretch the strips a little and lower into hot oil. Deep fry, turning constantly until each cruller turns puffy and golden brown.
Rempeyek
Source
250g rice flour, sifted
1/2 tsp cumin seeds
1/2 tsp cumin powder
1/2 tsp fennel seeds
1/2 tsp fennel powder
1 tsp coriander powder
2 tsp salt, or to taste
60g cleaned ikan bilis, soaked and ground
1 tsp air kapur (slaked lime solution), optional
1 1/2 cup coconut milk, obtained by adding water to the milk of 1 coconut
100g peanuts
1 egg
oil for deep frying
1. In a mixing bowl, combine all the ingredients. Mix well and season to taste.
2. Heat the oil in a wok over medium heat. Heat a soup ladle in the hot oil. Spoon some batter - make sure there are nuts in every scoop - into the ladle and lower it into the oil. Cook until fritter is set, remove from oil and drain on paper towels. Repeat until the batter is used up.
3. Return the rempeyek to the hot oil and deep fry until crisp and golden brown. Alternatively, bake in the oven at 160 degree C for about 10 minutes. Remove and drain on paper towels. Cool completely before storing in air-tight containers.
Variation: Instead of grinding the ikan bilis, add whole to the batter.

Caramel Corn
Source
40g butter
60ml vegetable oil
1/2 cup corn kernels
1/2 tsp salt
Caramel:
15g butter
5 tbsp sugar
1. Combine the oil, margarine and popcorn. Set over high heat, and constantly shake the pan back and forth. After the first kernel of corn pops, place the lid on the pot, and continue shaking. When the popcorn starts to lift the lid up off the pan, remove it from the heat, and hold it over the paper bag until it stops popping.
2. Pour into a paper sack and season with half of the seasoned salt. Shake the paper sack to distribute the salt. Taste before adding more so you don't make it too salty. You can always add more salt.
Variations, Caramel Corn.
For making the caramel:
1. Melt butter and sugar and mix until it changes to a darker colour. Turn off the heat, add in popcorn and mix well quickly. Let it cool before storing in an airtight container.
Penang Laksa
Source
600g laksa noodles, scalded
A:
l kg flaked wolf herring (ikan parang)
a pinch of salt
2000ml water
B: (Spices to grind finely)
6-7 fresh chillies
4-5 dried chillies
1 small piece galangal (lengkuas)
2 cm fresh turmeric
20 shallots
2 cloves garlic
6 candlenuts (buah keras)
C:
5 stalks vietnamese coriander leaves (daun kesom)
1 torch ginger (bunga kantan), cut lengthwise
5-4 stalks lemon grass, smashed
D: (Mix and strain)
50g tamarind (assam jawa)
250ml water
4 pieces asam keping
1 tbsp shrimp paste (belacan), roasted
Salt and monosodium glutamate to taste
Garnishing: (Slice thinly)
100g pineapple
1 cucumber
2 torch ginger (bunga kantan)
3 red chillies
2 big onions
200g lettuce
Mint leaves
Enough sticky black prawn paste (hayko), dissolved in a little hot water
1. Boil fish with the water. When fish is cooked, remove it from the stock and flake it. Leave water (fish stock) in the pot.
2. Add (B) and (C) in the fish stock and simmer until it reaches the desired consistency. Put in flaked fish meat and keep the laksa gravy over a moderate heat.
3. Put laksa noodles into serving bowls. Spoon the laksa gravy over and start garnishing. Serve hot with a little prawn paste.
Orange Butter Cake with Mixed Fruits

The original recipe was without the mixed fruits, but I had some leftovers. Gotta use it!
150g butter
100g castor sugar
grated rind of 1 orange
3 eggs, separated
1 1/2 tbsp freshly squeezed orange juice
125g self-raising flour, sifted
1/8 tsp baking powder, sifted
1 tsp milk powder
250g mixed fruits, mixed with 3 tbsp plain flour
1. Grease sides and line the base of a 20cm round cake tin with greaseproof paper. Preheat oven at 170 degree C.
2. Beat egg whites with some of the sugar until it form firm peaks.
3. In a mixing bowl, beat yolks with sugar and orange rind until double the size. Add in orange juice and beat again for a minute.
4. Cream butter and whisk in the yolk mixture.
5. Fold in flour and baking powder alternately with meringue.
6. Fold in fruits lightly, remember not to over mix them.
7. Bake for 50–60 minutes or until cooked. Leave the cake to cool for 5–10 minutes before turning out onto a wire rack to cool completely.

Honey Kentucky Biscuits

Believe it or not, it taste exactly like the honey KFC biscuits.
2 cups all-purpose flour
2 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tbsp white sugar
115g butter
1/2 cup buttermilk
3 dessertspoons honey
1. Preheat oven to 200 degrees C.
2. In a bowl, mix the flour, baking powder, baking soda, salt, and sugar. Cut in butter until the mixture resembles coarse crumbs. Mix in the buttermilk and honey. Turn out onto a lightly floured surface, and knead 1 minute.
3. Transfer to an ungreased baking sheet, roll into a 6x6 inch square, and cut into 12 even sections. Do not separate.
4. Bake 15 minutes in the preheated oven, until a knife inserted in the centre of the square comes out clean. Serve hot with butter and/or maple syrup.
Zebra Cake

6 eggs, separated
110g sugar
150g cake flour, sifted
1/2 tsp baking powder, sifted
1/2 tbsp emulsifier/ovalette, optional
100g butter, melted
30g condensed milk
1 tsp vanilla essence
2 tbsp cocoa powder
1 tsp of instant coffee, mixed with 3 tbsp of hot water
1. Prepare and grease an 8 inch round cake pan. Beat egg whites with some of the sugar until it form firm peaks.
2. Beat yolks with sugar and emulsifier until double the size. Pour melted butter, condensed milk and vanilla essence. Mix at slow speed. Fold in flour and baking powder alternately with meringue.
3. Divide batter into 2 equal portions. Fold chocolate solution into one of the batters.
4. Using tablespoon, scoop 3 tbsp of uncoloured batter into centre of cake pan. Then, scoop 3 tbsp of chocolate batter on top of uncoloured batter. When you have finished about half of the batter, reduce to 2 scoops each now and continue layering.
5. Reduce the amount of batter gradually until you only pour 1 scoop of each batter. The circles become smaller as you pour.
6. Bake for 40-45 minutes in a preheated oven at 175 degree C. Let cake in pan for 10 minutes before turning it on to a wire rack to cool complete.
Ding Dang and Tora
Not exactly a tiger. >_<
I remembered eating these chocolates when i was small. And i even got a whistle and a small torch.
Potato Wedges
3 large potatoes or 5 medium sized potatoes
1 cup plain flour
1 cup water, or as needed
1 tsp salt
1/2 tsp black pepper
1/2 tsp white pepper
1/2 tsp sugar
1 tsp chili powder
1/2 tsp turmeric powder
1. Peel the potatoes and boil them for 10 minutes or until they are half cooked.
2. Dry the potatoes. Mix the rest of the ingredients. Toss in the potatoes.
3. Fry them in very hot oil until they turned yellow and crisp.
Ebikatsu burger (Prawn Burger)

250g shrimp, cleaned and peeled
60g mashed potato
25g flour
2 tbsp mayonnaise
1 tbsp oregano, optional
1 tbsp cayenne pepper, optional
salt and pepper to taste
Coating:
1 egg
flour
bread crumbs
1. Take 2/3 of the shrimps and cut them 1 cm in length. Place the rest of the shrimps in the food processor and blend to form shrimp paste.
2. In a bowl, mix together all the ingredients and form into burger patties.
3. Coat the burger patties with flour, followed by egg and lastly bread crumbs.
4. Deep fry until golden brown.
5. Serve with burger buns, cheese, sliced tomato and fresh lettuce.
Layered Murtabak

400g minced meat
3 tbsp curry powder
2 tbsp ground onion
1 tsp ground garlic
1 inch ground ginger
250ml water
3 tbsp oil, for frying
1 tsp salt
5 dashes white pepper
4 eggs, beated slightly
45 pieces cream crackers, or as needed
300ml milk
200ml coconut milk
6 red chillies, minced
6 chinese celery, minced
4 tbsp butter
1. Heat oil, fry onion, garlic, ginger and curry powder until fragrant. Add in meat and mix for 3 minutes. Pour in water and stir occasionally. When it dries up, add in salt and pepper. Stir in celery and chillies.
2. Lined baking tin with foil and brush some oil.
3. Dip biscuits into the milk that has been combined with coconut milk. Arrange them neatly at the bottom of the tin.
4. Sprinkle 1/5 of the meat mixture. Pour in 1/5 of the egg.
5. Repeat step 3 and 4 until finish. Add in the remaning coconut mixture until it levels at the top. Add in butter.
6. Bake for 45 minutes at 200 degree C or until cooked. Let it cool before cutting.
Chocolate Crinkles
Mine wasn't crinkled at all, so I found out that you should put your tray at the top part of your oven. >_<
170g dark chocolate
85g butter
185g all purpose flour, sifted
3 tbsp cocoa powder
3/4 tsp baking powder, sifted
115g sugar
2 eggs
1 tsp vanilla
1/2 tsp salt
1. Melt chocolate with butter using the microwave or double-boiling.
2. Beat sugar and eggs until thick and smooth. Add vanilla and melted chocolate. Mix until combined. Add the flour, cocoa mixture and salt, mix till just combined.
3. Scoop dough out into a plastic container with a tight-fitting lid, cover and refrigerate for at least 2 hours.
4. Grease baking tin, roll dough into a 1 inch balls and place about 3 cm apart. Place unused dough back in the fridge.
5. Place tray at the second from the top of the oven rack. Bake in a preheated oven at 170 degree C for 15 minutes. Let cookies cool for 5 minutes before transferring them to the cooling rack.
